A St. Patrick's Day Meal with Leftovers to Dream Of

Our family would not think of missing out on St. Patrick's Day.
We enjoy the traditional meal of corned beef, cabbage, potatoes, and carrots - with lots of butter.
We make sure to cook up enough corned beef for corned beef, pickle, and mustard sandwiches on dark rye bread, and corned beef hash. This year, I am thinking of serving the hash with fried eggs on top; it's very delicious looking - as seen here.
